EQ, or "equalizer", is an effect that changes the amplitude in a specific frequency area, without touching the other frequences. It is both used to create the sound you want to have on each instrument and on the whole song, and to prevent the tracks from "colliding" with each other.

If two recorded instruments sound very similar, there is a risk that it's gonna be hard to distinguishe each track. Therefore, you give each track its own frequency area. For best result, you increase some frequencys on track A, and decrease the same frequencys on track B, and the same on the other track.
